No-Bake Oatmeal Butterscotch Cookies

Foolproof butterscotch cookies perfect for holiday gifting!

Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 2/3 cup evaporated milk
  • 1 cup butterscotch chips
  • 3 1/2 cups quick cooking rolled oats
  • 1/2 cup coconut

Instructions

  1. Combine butter, sugar and evaporated milk in medium saucepan. Cook over medium-high heat, stirring constantly, until mixture comes to a boil and boils for one minute.
  2. Remove from heat and stir in butterscotch chips until fully melted.
  3. Stir in oats and coconut until fully combined.
  4. Drop by teaspoonfuls onto cookie sheets lined with parchment paper. Let cool until hardened.
  5. Store in covered container in fridge or freezer.
