I have to say that overall, I really like making lunches every day, even if I do sometimes flounder for ideas a bit. Zackary is pretty easy to please as far as lunch is concerned; he likes fresh fruit, granola bars and sandwiches loaded with meat. As a result, we go through a lot of deli meat and I always have my eye out for the newest variety to hit the shelves. So I enthusiastically agreed when I was given the chance to try new Maple Leaf Deli-fresh sandwich meat.

Having the meat freshly sliced to order makes a huge difference in the taste and so I was very curious to see if Maple Leaf Deli-fresh sandwich meat could compare.

Ham and Cheese Muffins and Other Lunchbox Alternatives to the Sandwich-Find Them at Life Made Delicious #LMDConnector

When my boys were younger, lunch was as hassle-free as breakfast. I always made sure we had a good supply of kid-friendly favourites like macaroni and cheese, soup, sandwich meat and oriental noodles and when lunch arrived, I just asked my boys what they wanted and they chose from the array of products in the cupboard and fridge.

But now Zackary is in Grade One and that means that I need to find ways to keep his lunches interesting and appealing so that he gets the nourishment he needs for a long day. The snacks are easy; I simply choose from a variety of Zackary’s favourites including pudding, applesauce, fruit slices, granola bars, raw veggies and fruit snacks to make sure that he gets different healthy snacks and treats every day. But keeping the sandwich interesting…now that’s a challenge.

I had been experimenting a bit with different shapes of sandwiches and wraps but I was starting to run out of ideas, so I did what I always do when I need a little inspiration for my meals: I visited the Life Made Delicious website and searched for lunch meals. Making Lunches Just Got Easier with Rubbermaid LunchBlox Kits-Giveaway

I love reusable lunch containers and since Zackary started preschool back in 2010, I’ve amassed quite a collection. To ensure that the lunch I was making stayed cold and fresh, I just popped the Blue Ice insert into the freezer the night before and then locked it into place on the LunchBlox containers when packing up the lunch in the morning. Kat’s Sweet and Tangy Avocado Sandwich

Ingredients:

  • 2 slices ACE Bakery Honey Whole Wheat Artisan Bread
  • 2 oz. aged cheddar cheese, sliced
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 2 tsp. ACE Bakery Organic Honey
  • 2 tsp. Balsalmic vinegar of Modena
  • lettuce leaves
  • olive oil, salt and pepper to taste

Preparation:

Brush bread with olive oil and broil in toaster oven until light golden.

Spread one slice of bread with honey and add sliced aged cheddar cheese, avocado and tomato.

Drizzle balsamic vinegar over vegetables and sprinkle with salt and pepper.

Top with lettuce and second slice of bread. Cut in half and enjoy!

Serves One

I started by brushing two pieces of bread with olive oil and toasting them under a broiler until they were slightly golden on both sides. I think that the Honey Whole Wheat Oval from ACE Bakery would be the best choice for this sandwich but this time I used slices from a Rustic Italian Oval loaf. Then I spread one slice of bread with the ACE Bakery Organic Honey. I layered aged cheddar cheese, avocado and tomato on the bread and then added salt, pepper and a hearty drizzle of Balsamic Vinegar of Modena. A piece of lettuce and the final slice of bread completed my creation!

I thought the idea of using honey on a savoury sandwich would create an interesting taste when paired with the balsamic vinegar and I loved the result! The sweet honey and tangy vinegar blended so nicely and added great flavour to the veggies. I don’t know if it’s Canada’s Best Sandwich, but it’s certainly one that I’ll make again!
