One of the first products I reviewed after starting Mommy Kat and Kids was Tropical Traditions Gold Label Virgin Coconut Oil. My mom had recently become a fan of coconut oil so I was very excited to give it a try and after my first taste, I fell in love. It is absolutely scrumptious in everything from savoury stir-fries to decadent desserts and so when I got the chance to review a jar of this delicious coconut oil once more, I was delighted!
The difference between Tropical Traditions Gold Label Virgin Coconut Oil and some other brands of coconut oil is the extraction process. The company extracts the oil by grating the fresh coconut, extracting the coconut milk and then letting the coconut milk stand in a covered bucket. After about a day, the oil naturally separates from the water producing a crystal clear oil. The natural process ensures that the oil retains the full taste and aroma of coconut, which is what makes it such a fabulous choice for adding flavour to your dishes!
My favourite way to use coconut oil is as a replacement for regular cooking oil when I’m making fried rice because each kernel of rice soaks up the fantastic flavour of the oil. But another one of my favourite dishes to add coconut oil to is a nice rhubarb crisp. Using coconut oil instead of melted butter in the crumbly oat topping creates the tastiest crisp imaginable!
Cooking with coconut oil really couldn’t be easier; just replace the butter or cooking oil in your favourite recipe with an equal amount of coconut oil and follow the directions as usual. It’s a great way to enjoy all the benefits of coconut oil no matter what you’re in the mood to munch!

The best ever is popcorn cooked on the stove in a pan with coconut oil and some Real Salt. Everyone in our family loves it!
