My family is absolutely crazy about eggs, and I have all kinds of favourite egg recipes to prove it! From my Finnish mom’s always popular Poached Codfish with Egg Sauce to my husband’s favourite Bacon Egg Salad Wrap, eggs are used so often in our house that I buy packs of 30 instead of ordinary cartons…and still run out all the time! Did you know October 11 is World Egg Day? While I personally think that any day is a great day to celebrate the perfectly balanced food that is the egg, World Egg Day is an additional reason for me to do some cooking with one of my all-time favourite ingredients!

The humble egg may not be a food that’s often celebrated. But in my opinion, it should be! Eggs are one of the most inexpensive sources of protein available and are incredibly versatile! From a tasty and hearty Potato Frittata to tempting Tuna Salad Deviled Eggs, there are so many ways to cook with eggs.

It always amazes me how busy my family is when summer arrives. School may be out for two months, but our schedule doesn’t seem to slow down at all!

In fact, with three boys in the house every day, I need quick and easy weekday meal solutions more than ever.

That’s why I’ve started making sure that I always have Burnbrae Farms Naturegg Simply Egg Whites in my fridge to help with those weekday challenges.

These egg whites are fully pasteurized, making them perfect for everything from smoothies to royal icing. And with just a few added ingredients, they make a great healthy meal!

Super Easy Homemade Blueberry Muffins and a Quick Road Trip Checklist

While an exotic vacation is always a treat, I have to say that I have just as much fun on a good old-fashioned family road trip as I do hopping on a plane. Finding the many beautiful landmarks and cities that are just a short drive away is such a treat and of course, the journey is always half the fun as well!

Right now, we’re preparing for a road trip to the beautiful Big Muddy region in Southern Saskatchewan, and that means I’m ensuring that my car, house and family are all ready for our upcoming adventure!

With two hungry boys to feed, good road trip food is a must when I’m planning a trip. We have a few top road trip food choices, but muffins are probably my personal favourite.

They’re portable, relatively mess-free to eat and can be baked up in a variety of flavours to suit my boys’ tastes. And in the summer, these easy Blueberry Muffins are always a hit, though I often make them with freshly picked Saskatoon berries when I can! [Read more…]

Best Ever Gourmet Grilled Cheese with Two Cheeses and Roasted Garlic Artisan Bread

December 5, 2016 by Kathryn 50 Comments

Like most kids, I loved grilled cheese sandwiches when I was young. The sandwich of my youth was the classic processed cheese slice on white bread flattened down as much as possible and cooked to a golden brown. I still love the idea of grilled cheese, but my tastes have matured since those days. So I decided it was time to make my grilled cheese sandwich gourmet!

With two cheeses, artisan bread and a creamy tomato and roasted red pepper soup served on the side, this sandwich was everything I had hoped it would be. If you’ve been looking for a top-shelf grilled cheese, look no further!
