It always amazes me how busy my family is when summer arrives. School may be out for two months, but our schedule doesn’t seem to slow down at all!

In fact, with three boys in the house every day, I need quick and easy weekday meal solutions more than ever.

While an exotic vacation is always a treat, I have to say that I have just as much fun on a good old-fashioned family road trip as I do hopping on a plane. Finding the many beautiful landmarks and cities that are just a short drive away is such a treat and of course, the journey is always half the fun as well!

Right now, we’re preparing for a road trip to the beautiful Big Muddy region in Southern Saskatchewan, and that means I’m ensuring that my car, house and family are all ready for our upcoming adventure!

With two hungry boys to feed, good road trip food is a must when I’m planning a trip. We have a few top road trip food choices, but muffins are probably my personal favourite. They’re portable, relatively mess-free to eat and can be baked up in a variety of flavours to suit my boys’ tastes. Like most kids, I loved grilled cheese sandwiches when I was young. The sandwich of my youth was the classic processed cheese slice on white bread flattened down as much as possible and cooked to a golden brown. I still love the idea of grilled cheese, but my tastes have matured since those days. So I decided it was time to make my grilled cheese sandwich gourmet!

A Creamy Greek Pita Sandwich with Summer Fresh Tzatziki Dip Makes a Delicious School Lunch

Preparing for a new school year means preparing ideas for school lunches that are quick to pack, healthy and tasty enough that my boys will actually eat them! I have a few tried-and-true favourites, but I’m always trying out fun new recipes too. And when I want to add extra flavour to any of my creations, I turn to Summer Fresh!

Summer Fresh hummus, dips and salads are delicious, nutritious and made with fresh, wholesome ingredients that my whole family loves. To be honest, my favourite way to use Summer Fresh products is to just cut up a big plate of fresh vegetables, open up a container of my favourite Avocado Hummus or Three Cheese Dip and dig in! But I do like using the products in other ways too. And this tasty Creamy Greek Chicken Pita is the perfect example of how Summer Fresh can make fall lunches easy and delicious! With only six ingredients and minimal time, I was able to whip up a sandwich the whole family loved!

Even though it’s not an official holiday in the United States and Canada, I love celebrating Cinco de Mayo in some way every year. Sometimes I plan a whole big Mexican-themed party just for fun. Everyone knows that breakfast is the most important meal of the day, and to ensure that I have the energy I need when I’m especially busy, a good breakfast is a must. This month, as part of the President’s Choice Guiding Stars program, I was challenged to create a recipe using only ingredients that the program has awarded three stars. Since so many women find it hard to enjoy a nutritious breakfast, I decided to share my quick and easy Breakfast Berry Parfait recipe! It’s filling, packed with nutrition and uses all three-star ingredients!
