Green & Black’s Chocolate Chunk Hot Cross Bun Pudding Recipe

Looking for an easy and decadent dessert for Easter Dinner or a sumptuous addition to Easter Sunday Brunch? You can’t go wrong with this absurdly rich hot cross bun pudding! The recipe calls for marmalade but mentions that you can use other jams or spreads if you prefer.

I decided to use my very favourite homemade wild plum jam for this. Then I sprinkled chunks of Green & Black’s organic chocolate over the jam-covered buns.

I loved the fact that the recipe was so easy, but I made it even easier with another small change. Instead of using a whole vanilla bean in the custard, I just added a teaspoon of vanilla extract to the egg and sugar mixture. A whole vanilla bean would have added more flavour, but this saved me the hassle of sieving the custard before pouring it over the buns.

And after thirty minutes of baking, I had my finished hot cross bun pudding! I could not believe how scrumptious this was; the chocolate chunks and whipping cream make it heavy on calories but it is so worth it! It’s filling too, so a little goes a long way.

Chocolate Chunk Hot Cross Bun Pudding

Yield: 6
Prep Time: 45 minutes
Cook Time: 30 minutes
Total Time: 1 hour 15 minutes

A fun Easter or spring bread pudding made with hot cross buns!

Ingredients

  • 500 ml Whipping cream
  • 325 ml 2% Milk
  • 1 vanilla pod (or 2 tsp. vanilla)
  • 3 Large eggs
  • 115 g Granulated sugar
  • 6 Hot cross buns
  • /50 g Unsalted butter
  • ½ jar (approx. 220g) Coarse-cut marmalade or other jam
  • 200 g Green & Black’s Organic Dark, Milk and White Chocolate, broken into pieces
  • Powdered or confectioner’s sugar to serve

Instructions

  1. Preheat the oven to 170ºC/325ºF.
  2. Pour the milk and cream into a saucepan.
  3. Split the vanilla pod, scrape the seeds out with the tip of a knife and add them to the saucepan along with the pod. Bring the milk, cream and vanilla to a boil and remove from the heat.
  4. Whisk together the eggs and granulated sugar.
  5. Remove the vanilla pod from the boiled milk and cream and slowly pour the mixture on to the egg and sugar while whisking.
  6. Return the vanilla pod to the custard mixture to further enhance the flavour.
  7. Split the hot cross buns into halves. Butter the cut sides and spread with marmalade.
  8. In a baking dish, stack the buns at an angle with the buttered side facing up. The buns should rest on one another resembling fallen dominos.
  9. Scatter the chocolate pieces over the buns, making sure to tuck plenty between each layer.
  10. Sieve the custard mixture into a container then pour it on top of the buns in the baking dish. The tops of the buns should be visible once all the custard has been added. Allow the buns to soak in the custard for 15 minutes.
  11. Boil water in a large roasting pan. Once the water is boiled, place the baking dish with the buns and custard into the larger pan to create a double broiler.
  12. Bake for approximately 30 minutes. The dish is ready once there is a slight browning on the tops of the buns and there is a thick consistency to the custard.
  13. Remove from the broiler and dust with powdered or confectioner’s sugar to serve.

Notes

For an extra burst of flavour, substitute your favourite jam for the marmalade, or even create a mixture. Apricot and raspberry are delicious substitutions. If desired, stir 2 tsp. vanilla into the custard instead of using the vanilla pod.

Happy 100th Birthday Oreo!

The Oreo is arguably the most beloved cookie of all time and today, everyone’s favourite chocolate sandwich cookie celebrates its 100th birthday! It’s time to relive all those beloved childhood memories and enjoy celebrating with a year-long Oreo Birthday Party!

To help Canadians get into the party spirit, Oreo has all kinds of exciting promotion happening right now! From a special limited edition Birthday Cake Oreo to three brand new recipes featuring tasty Oreo cookies, there are tons of ways to celebrate! I was so excited when I received an amazing party box to help me feel like a kid again, with a little help from Oreo!

While the entire box was so much fun, the highlight of the party pack was definitely the special-edition Birthday Cake Oreos. The smell when I opened these cookies was just incredible and we devoured the entire package in just over a day; they were that irresistible!

OREO Cookies & Cream No-Bake “Cheesecakes”

Prep Time: 15 min. plus refrigerating | Makes: 8 servings, 3/4 cup (175 ml) each

What You Need!

2 cups whipping cream

1 pkg. (250 g) cream cheese, softened

1/3-cup sugar

1 tsp. vanilla

8 Mini Oreo Cookies

Make It!

  1. Chop 8 large cookies finely; spoon into 8 (6-oz.) glasses. Coarsely chop remaining large cookies; set aside.
  2. Beat cream with mixer on high speed until soft peaks form. Reserve 1/2 cup for garnish; refrigerate until ready to use.
  3. Beat cream cheese, sugar and vanilla in large bowl until well blended. Gently stir in remaining whipped cream. Add coarsely chopped cookies; mix lightly. Spoon over cookie crumbs in cups. Refrigerate 6 hours or until chilled.
  4. Garnish with remaining whipped topping and mini cookies just before serving.

Celebrate Chinese New Year with VH Sauces-Giveaway

I was never a picky eater when I was a child, so I must admit that I find my boys’ fussiness about food to be rather frustrating. Zackary currently argues against eating virtually any new food I put in front of him and Benjamin, despite the fact that he actually likes every food I give him, inevitably refuses to try anything that his brother has refused to taste.

Needless to say, I will try anything when it comes to getting my little picky eaters to try new things. So I was very excited when I learned about the quick and easy Chinese New Year recipes currently being featured on the brand new VH Facebook page!

I got the chance to try one of these tasty family-friendly meals for myself so I decided to indulge a little with Bacon-Wrapped Pork with Bok Choy. I couldn’t believe how easy this recipe was; with just five ingredients and five steps, what a perfect main dish for a busy mom!

Ingredients
  • 1 lb (500 gr) pork tenderloin
  • 1 tsbp (15 mL) vegetable oil
  • 8-10 slices bacon
  • 8 cups (2 L) baby bok choy, sliced in half lengthwise and washed
  • 1 bottle VH® Sweet & Sour Sauce
Directions
  1. Heat oven to 400˚F (200˚F), slice tenderloin into 2 pieces. Heat oil in a large sauté pan over medium-high, brown the pork, about 7 minutes.
  2. Layer 4-5 bacon slices side by side on a cutting board, allow edges to only slightly overlap. Place one piece of pork across the bottom ends of the bacon strips, roll the bacon around the tenderloin and place the wrapped pork seam side down in a baking dish. Repeat with second piece and remaining bacon.
  3. Place baking dish in oven and cook until bacon is browned and pork is cooked through, about 30 minutes. (pork should be cooked to an internal temperature of 160˚F (70C)˚).
  4. Pour out leftover oil from sauté pan, add baby bok choy and 2 tbsp (30 mL) water, cover and cook on medium heat for 8 minutes, add bottle of VH® Sweet & Sour Sauce and heat through, lower heat to simmer and keep warm.
  5. When pork is ready slice and serve with bok choy and VH® Sweet & Sour Sauce.

In my small hometown, baby bok choy was nowhere to be found so I decided to substitute broccoli, another popular ingredient in Chinese recipes. The bacon-wrapped pork looked so classy and the VH Sweet and Sour Sauce that I drizzled over the top really completed the entire elegant look of the meal. I’ve always been better at hearty home-style meals than gorgeous gourmet ones, but this amazing VH recipe made creating a gourmet meal easy!

Best of all, both of my boys loved their special Chinese New Year meal! They decided they would prefer raw broccoli instead of the sweet and saucy broccoli that my husband and I gobbled up, but they positively devoured the pork loin! It just goes to show that when you’re cooking for a house full of males, making a main dish that’s wrapped in bacon is probably a good decision!

Chinese New Year starts on January 23 and runs for fifteen days, so the upcoming few weeks are a great time to introduce some ethnic flavours into your usual meal routine.
