Slow Cooker Taco Casserole – Quick, Easy and Delicious

February 27, 2018 by Kathryn 26 Comments

If there’s one meal that my family loves, it’s tacos. And even though tacos are hailed as being an easy meal choice…well darn, they’re just not. First, there’s preparing the beef. Then the endless task of chopping the vegetables and scooping the sauces begins. And then, finally, kids and adults alike can prepare their tacos.

But the work doesn’t end there. Because now, after supper ends, parents get to clean up the toppings that have inevitably spilled onto the floor. Broken taco shells, shredded lettuce, splatters of salsa…there has to be a better way!

Well luckily for taco lovers everywhere, there is! Say hello to your weekday saviour, a meal everyone in the family will rave about…

Slow Cooker Taco Casserole!

My husband was the creator of this delectable delight and if you’ve been searching for a family-pleasing favourite, look no further. Whether you’re using a slow cooker or an Instant Pot, this meal will whip up in a flash.

Now let’s talk toppings. They can be as simple or as complex as your family desires. In our househohld, all the traditional taco toppings make an apprearance. But my personal favourites are avocado, cilantro and even more shredded cheese. There can never, ever be enough shredded cheese.

So no matter how you like your tacos, or how easy you think a taco dinner is already, you need to try this casserole. It will redefine Taco Tuesday in your house!

Family Dinner is Quick and Tasty with an Easy Peanut Beef Recipe

April 19, 2016 by Kathryn 27 Comments

A few weeks ago, my fiance and I were setting the table for dinner and he mentioned that one thing we’ve really mastered since moving in with one another is the family dinner. Without fail, the four of us manage to sit down to a home-cooked meal almost every night. And even on nights when Jeremy’s job takes him to work, the boys and I have a family dinner of our own.

Making meals that we enjoy as adults, but that are still kid-friendly, is a big help when it comes to making family dinner a priority. And since we’re a typical busy family, having quick and easy meals in our repertoire is a must. That’s why Canadian Beef is a frequent choice for our dinner table! Whether we’re cooking up succulent burgers, tender steak or spicy tacos, beef is the perfect fast and delicious choice for the whole family!

Throwing a Hit Viewing Party is Easy with the SUBWAY Canada Prime Rib Melt-Giveaway #ItsPrimeTime

November 12, 2015 by Kathryn 315 Comments

I’m really not a big television person, but I do have a few must-see shows. In the spring, I always make time for the newest season of Game of Thrones. And in the fall, watching the latest episodes of The Walking Dead is a must. My significant other has the same must-see television list that I do (in fact, he was the one that originally got me hooked on The Walking Dead), so watching the latest episode together each week is one of our bonding moments.

Usually, it’s just the two of us relaxing at home while we watch but last Sunday, SUBWAY Canada challenged us to make our prime time television viewing even better with our own The Walking Dead viewing party. And with the hugely popular SUBWAY Prime Rib Melt featuring 100% Canadian beef back as an everyday menu item at SUBWAY Canada, we knew we had the food figured out!

The Decor

Throwing a viewing party might seem like a lot of work, but I soon learned that it doesn’t take much to turn an ordinary night of watching television into something special. We invited a few couples over for the event and I started planning ways to add some zombie style to the house. My first stop was the dollar store. I grabbed “blood” red plates as well as a katana-style toy sword like the one Michonne uses and a black toy gun to toss on the table as props. [Read more…]

Treat Yourself to the New McDonald’s Mighty Angus Burger-Giveaway

August 18, 2015 by Kathryn 199 Comments

I don’t eat fast food very often, so when I do decide to treat myself, I want the meal I choose to be something I’ll absolutely adore. And whether I’m in the mood for something sweet or something savoury, McDonald’s has some menu options that win my heart every time. In fact, Sausage and Egg McMuffin breakfast sandwiches have been my all-time favourite breakfast ever since I was a kid, and I still can’t resist an Oreo McFlurry on a hot day!

But oddly enough, one of the McDonald’s menu choices I wasn’t all that crazy about was the hamburgers. They just didn’t wow me the way some of the other menu items did, and as somebody that loves to barbeque, I was happier making my own burgers at home. Now, that’s changed thanks to the introduction of the Mighty Angus Burger! [Read more…]

Cooking Up Carne Asada Tacos with The Roundup App from Canadian Beef

February 24, 2015 by Kathryn 30 Comments

As somebody that loves to cook, I have a passion for food and choosing a favourite meal is no easy task for me. But there are a few dishes that I especially love and one of those is a thick and juicy ribeye steak cooked on the barbeque. The rich taste of beef is one that almost everyone loves and when it’s prepared just right, it’s irresistible.

Because beef is such a popular food, it’s always fun to find new ways to use it in meals and recipes. And to help with that, Canadian Beef has created a fabulous new app called The Roundup, available for iOS and Android systems. While the app does feature some tasty recipes, that’s just the start of the useful information it has available!

Make Easy Chicken with Mushroom Cream Sauce for Dinner and Eat

November 6, 2014 by Kathryn 38 Comments

I shop at Walmart for all kinds of things, from clothing to toys to furniture to electronics. But one of the sections of the store that’s impressed me more and more lately is the grocery section. I used to make a separate trip to a grocery store every time I went to Regina to shop, but lately I just haven’t needed to do that. I can get all the food my family needs at Walmart!

And that even includes fresh, Canadian protein choices like chicken, Angus beef, pork and salmon. Recently Walmart Canada sent me a gift card so that I could grab some fresh, delicious meat for my family and see for myself how delicious it is to eat fresh with Walmart. Of course, I was only too happy to oblige. [Read more…]
