Finnish Salt Poached Cod with Butter Egg Sauce Recipe

When it comes to cooking, salt often plays a great supporting role, but it’s rarely the star of the show.

Its ability to enhance and alter flavours by decreasing bitterness while increasing perceptions of sweetness or sourness means that even when you can’t taste it, the food you’re eating is better because salt is there.

But when Windor Salt wanted to celebrate the release of a fresh new logo and packaging design for its products with some tasty recipes, I thought it was high time that salt took a starring role in a dish!

With light summer flavours a favourite right now, seafood is always a top pick for dinner. And as it happens, one of my favourite seafood dishes is one that uses salt poaching to enhance the flavour and texture of the fish.

Salt Poached Cod with Butter Egg Sauce is a Finnish recipe that might sound like an unusual combination at first. But the flavours blend together in a way that is completely magical.

When it comes to meals, my family loves a bit of spice. Whether we’re digging into cheesy enchiladas, devouring smoky and spicy barbequed ribs or adding wasabi liberally to our sushi, we all believe that spice makes dinner extra nice! So when Jeremy and I took the boys to the new Indian restaurant in Moose Jaw, we had high hopes that they would find something they liked. And they did! Both fell in love with Butter Chicken and after that dinner, it’s a dish I’ve made more than once at home!

SUBWAY Canada knows that we’re not the only Canadians that like some diversity in our food, so the company is constantly coming up with new and delicious flavour options for its subs. And I was pretty excited when I learned that the newest menu item available was a Butter Chicken sandwich! Tropical Peanut Butter Balls Make a Tasty and Healthy Snack

Looking for a family snack that’s quick, made from wholesome ingredients and easy to customize? Look no further because Peanut Butter Balls have it all!

These no-bake snack bites combine oats, honey, peanut butter and any other fun additions your heart desires for a snack that’s as healthy or as decadent as you want it to be.

There are so many amazing recipes for these tasty morsels on the Kraft What’s Cooking website, but I decided I wanted to create my own, and after seeing the recipe for Fruit And Nut Peanut Butter Snack Bites, I had a pretty good idea of what I wanted to use for my own version of peanut butter balls.

And so my Tropical Peanut Butter Balls were created!

By using some wholesome and delicious ingredients to up the nutritional value of these fun energy balls, I was able to create a treat that made a perfect after school snack or quick breakfast for my boys on a busy morning.

I used ground flax seed for extra fibre along with a delicious blend of tropical fruit and nuts for a treat with tons of flavour that would also provide my boys with extra energy.

Since these energy balls are so easy, there’s really no limit to what can be done with them. In fact, as much as I liked making this healthy tropical version, I’m already planning another batch. This time I’m thinking Rocky Road Peanut Butter Balls using chopped Baker’s Semisweet Chocolate, walnuts, coconut and mini marshmallows!

Tropical Peanut Butter Balls

Yield: 20
Prep Time: 10 minutes
Cook Time: 30 minutes
Inactive Time: 30 minutes
Total Time: 1 hour 10 minutes

Easy peanut butter energy balls packed with nutrients, perfect for a quick breakfast or snack!

Ingredients

  • 1/2 cup Kraft Smooth Peanut Butter
  • 1/4 cup honey
  • 1 cup large flake rolled oats
  • 2 tbsp. diced dried mango
  • 2 tbsp. dried banana chips, broken into bits
  • 2 tbsp. chopped macadamia nuts
  • 2 tbsp. unsweetened coconut
  • 2 tbsp. ground flax seed

Instructions

  1. Mix peanut butter and honey until blended. Stir in remaining ingredients.
  2. Refrigerate for 30 minutes.
  3. Roll into 20 one-inch balls.
  4. Serve immediately or refrigerate up to one week.

Popcorn is one of those snacks that I tend to forget about unless I’m at the movies, but it’s one of my absolute favourite treats when I do buy it. There are many people that love their peanut butter and if you’re one of those folks that could happily spread peanut butter on anything and everything, General Mills has some delicious news for you! For a limited time, Canadians can enjoy the great taste of new Peanut Butter Cheerios for breakfast! My boys are both huge peanut butter fans and so when I got the chance to review a fun Peanut Butter Cheerios pack, I couldn’t wait to see what Zackary and Benjamin would think.

peanut butter cheeriosThe pack included an assortment of fun breakfast and lunch goodies including spoons, bowls and a cereal container as well as two boxes of the new Peanut Butter Cheerios. Even though we don’t pick up the mail until late afternoon, Zackary still begged to try a bowl right away. I eventually convinced him that he needed to wait for morning and he was ready and waiting the next day to dig into his bowl of cereal!

The smell of peanut butter was noticeable as soon as I opened the box and I couldn’t help but be reminded of a fresh and tender peanut butter cookie. Fortunately, this cereal has a lot more nutritional value than one of my home-baked cookies does!
