Gluten-Free Eating is Pure Joy with Inspired by Happiness Gluten-Free Cakes-Giveaway

If there’s one thing that almost everyone loves, it’s cake. A big slice of moist cake covered in creamy icing is such a treat whether it’s for a birthday celebration or just a way to make an ordinary day more special. But for someone with food sensitivities, finding a cake that’s appropriate for a special diet yet still mouth-watering can be harder than it seems. Inspired by Happiness, a company that wants everyone to be able to enjoy tasty cake any time, wants to change that with its new gluten-free cakes. And recently I had the chance to test them out and see what I thought!

I received a Cravin’ for Cookies & Cream and a Dreamin’ of Chocolate layer cake to test, carefully packaged on dry ice to arrive frozen. I loved that when kept frozen, these cakes stay fresh and delicious for up to six months. Once thawed, they can be stored in the refrigerator for about a week. I let my boys decide which cake they wanted to try first, and both of them decided the Cookies & Cream cake was the one we had to try. With Christmas just a few weeks away, I am baking up a storm getting ready for the upcoming holiday. And whether I’m making cookies, candy, squares or slices, my Baker’s Secret pans are a must in my kitchen. I recently received the Baker’s Secret 5 pc. Easy Store Bakeware set, and it’s been an absolute must-have in my kitchen for holiday baking. The 9×13 cake pan is my personal favourite in the set; not only is it a great size for all kinds of squares, it’s ideal for my very favourite Cookies and Cream Cheesecake.

Ever since I was a child, I’ve loved cooking and baking. And perfecting new techniques when it comes to creating delicious dishes is always a fun experience. A few years ago I broke away from traditional iced birthday cakes and tried my hand at creating a fondant masterpiece for my son’s Super Mario Bros. birthday party. And I went from sloppily iced cupcakes to more intricate creations like spring cupcakes with “grass” frosting.

Treat Mom to a DQ Cake and Support the Children’s Miracle Network through Lindsey’s Cakes for Miracles #LCFM

When I was a child, one of the most exciting and coveted treats in my life was an ice cream cake from Dairy Queen. But with a birthday in January, I never actually got one. My sister, with a birthday in June, was more often the lucky one that got to blow out the candles on her DQ Cake and while I still got a piece of the cake to eat, it just wasn’t the same. Now, as a mother, I have the perfect excuse to enjoy a DQ Cake and the perfect time of year to enjoy it…Mother’s Day!

But this year, treating Mom to a DQ Cake will do more than just put a smile on her face…it will also support the Children’s Miracle Network through the Lindsey’s Cakes for Miracles program! From now until May 11, 2014, one dollar from every DQ Cake sold will be donated to the Children’s Miracle Network. The funds raised stay local and are used for life-saving equipment, research, community outreach and more at the local Children’s Miracle Network hospital.

Celebrate Warmer Days with this Easy Spring Flower Cupcake Recipe #LMDConnector

One of the things I love about spring is that time after the snow has melted and there is green grass and new little flowers everywhere. Here in Saskatchewan, that’s not something we get to enjoy in March too often. And this year has been especially miserable with the snow still taller than me out in the yard and temperatures that have only just started to reach the melting point in the last day or two.

I may not be able to enjoy green grass and sweet smelling flowers for another month or two, but spring is here and I want to celebrate! So I decided to create some fun little cupcakes for the family that captured the things I most love about spring. Taking my inspiration from the recipe for Spring Flower Brownies on the Life Made Delicious website, I treated my boys to Easy Spring Flower Cupcakes!
