While an exotic vacation is always a treat, I have to say that I have just as much fun on a good old-fashioned family road trip as I do hopping on a plane. Finding the many beautiful landmarks and cities that are just a short drive away is such a treat and of course, the journey is always half the fun as well!

Right now, we’re preparing for a road trip to the beautiful Big Muddy region in Southern Saskatchewan, and that means I’m ensuring that my car, house and family are all ready for our upcoming adventure!

With two hungry boys to feed, good road trip food is a must when I’m planning a trip. We have a few top road trip food choices, but muffins are probably my personal favourite.

Grab Your Kids and Try a Bacon and Corn Muffin Recipe

One of the things I love about summer vacation is that I can spend time teaching my boys some of the valuable skills that aren’t covered in school. And as somebody that loves to cook, I always enjoy getting into the kitchen with Zack and Ben so that they can learn how to make a few foods on their own.

Baking is my personal favourite kid-friendly cooking choice since the boys can help measure and mix the ingredients, so when Trudeau sent me some of their top bakeware items to test out, I decided to use the Trudeau Mini Muffin Pan to whip up my favourite bacon and corn muffin recipe with the boys.

Bacon and Corn Muffins may sound a little odd, but they are hands-down my favourite muffins ever. My mom used to make them for us as kids and the combination of sweet corn with the salty and smoky bacon is a match made in heaven. In mini form, they make a perfect bite-sized snack that the entire family loves! I cooked the bacon while the boys measured wet and dry ingredients into bowls. The finished bacon corn muffin recipe was a hit!

The Trudeau Mini Muffin Pan was the perfect choice for these muffins since the pan made it so easy to pop each one out thanks to the silicone design. I especially liked that the pan still had a metal frame for structure, yet also provided me the convenient food release and even cooking of silicone. I’ve wanted a mini muffin pan for quite awhile and now that I have such a great one, I’m sure I’ll be making bite-sized treats much more often!

The muffins themselves came out tender, delicious and beautifully golden-brown. I filled a bag with them and took them on our recent road trip for breakfast since their small size and lack of muffin papers minimized any mess.

As an added bonus, their small size means that usually I just pop them in my mouth as they are, rather than adding butter like I normally do with the larger bacon and corn muffin recipe. Less calories and fat in my diet without compromising taste is a win in my book!

Bacon and Corn Muffins

Savoury muffins that combine sweet corn and smoky bacon for an addictive breakfast or snack!

Ingredients

  • 5 slices bacon
  • 2 1/2 cups flour
  • 1 tbsp. baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1/2 cup maple or other syrup
  • 1 can 12 oz/341 ml whole kernel corn

Instructions

  1. Preheat oven to 400 degrees.
  2. Cook bacon until crisp. Crumble and set aside.
  3. Combine flour, baking powder and salt in large bowl until combined.
  4. In separate large bowl, whisk egg until light. Blend in milk, oil, syrup and corn.

  5. Add liquid ingredients to flour mixture, stirring just until moistened. Fold in bacon.
  6. Spoon mixture into greased mini muffin pans and bake 10-15 minutes, until skewer stuck into muffin comes out clean.

  7. Cool and eat.

Recipe Notes

If desired, bake in regular muffin pans for 20-25 minutes. Makes 12 large muffins.

Start Your Day Right with Nutrient-Packed Berry Blast Bran Muffins

Thanksgiving is the official kick-off of the holiday season for most families and ours is no exception. But between the colder weather, the extra treats and the decrease in time spent outdoors, it’s also the season when colds and flues start to attack with a vengeance. And that’s certainly been the case this year! My oldest son coming home from school with a cough has gradually led to every single member of our family spending at least a day in bed with a fever and a hacking cough.

Now that we’re all pretty much recovered, I know I need to do more to ensure we’re getting proper nutrition during the holiday months. Since a good breakfast is always a great place to start, I decided to create a hearty, nutrient-rich muffin recipe that would help my boys start the day off with plenty of energy and plenty of nutrients too!

Discover The Fun of a Little Miss Muffin Doll from Jay at Play!

What girl doesn’t love a big, oversized dolly? And what could be better than when that doll actually converts into a tasty-looking and delicious-smelling muffin? Well the Little Miss Muffin dolls we recently received from Jay at Play do exactly that and they’ve been a hit since they arrived at the house.

My two young daughters were delighted when we received the giant Little Miss Pumpkin Muffin and a smaller Little Miss Coconut Muffin. Each doll even comes with a small recipe card to make a simple sweet treat that relates to the doll’s identity. For example Little Miss Coconut Muffin came with instructions for Coconut Strawberries. Each recipe calls for only a few ingredients and is simple enough for the children to do most of the job themselves. My girls love helping in the kitchen and I was pleased to allow them the independence to create their own snack when they made Miss Pumpkin Muffin’s Funny Faces.

Ham and Cheese Muffins and Other Lunchbox Alternatives to the Sandwich

When my boys were younger, lunch was as hassle-free as breakfast. I always made sure we had a good supply of kid-friendly favourites like macaroni and cheese, soup, sandwich meat and oriental noodles and when lunch arrived, I just asked my boys what they wanted and they chose from the array of products in the cupboard and fridge.

But now Zackary is in Grade One and that means that I need to find ways to keep his lunches interesting and appealing so that he gets the nourishment he needs for a long day. The snacks are easy; I simply choose from a variety of Zackary’s favourites including pudding, applesauce, fruit slices, granola bars, raw veggies and fruit snacks to make sure that he gets different healthy snacks and treats every day. But keeping the sandwich interesting…now that’s a challenge.

I had been experimenting a bit with different shapes of sandwiches and wraps but I was starting to run out of ideas, so I did what I always do when I need a little inspiration for my meals: I visited the Life Made Delicious website and searched for lunch meals. And that’s when I found a recipe that would be a perfect replacement for Zackary’s sandwich…Ham and Cheese Muffins!
