Easy Spicy Baked Chicken Parmesan Recipe Makes a Quick Hearty Dinner on a Busy Day

September 21, 2016 by Kathryn 29 Comments

September is always a busy month for our family, but that’s never been more true than it is this year! Putting the boys in a new school in a new city, preparing for a work transfer and a house purchase and, to top it all off, we’re all flying to Ontario in less than a week as Jeremy and I get married and take our honeymoon!

Needless to say, there’s lots to do and limited time to do it. And that means easy, hearty and delicious dinners are a priority for me more than ever before.

Luckily, Kraft Canada came to my rescue this fall with two new Classico pasta sauces that combine gourmet flavour with heat-and-eat convenience. New Classico di Bologna Bolognese Pasta Sauce boasts tender pork and beef in a flavourful tomato sauce. And Classico Di Molise Spicy Tomato & Parmesan Cream Pasta Sauce combines spicy red pepper, tomato and real parmesan cheese for a rich and creamy sauce choice.

I decided to use one of the sauces to whip up a delicious dinner and since we all love chicken, I put my own kid-friendly twist on Spicy Tomato-Chicken Parmesan. With just four ingredients and thirty minutes, I created an oven-baked dinner the whole family loved: Spicy Baked Chicken Parmesan Casserole! [Read more…]

Enjoy Spaghetti Again with New Barilla Gluten Free Pasta and Recipes-Giveaway

March 19, 2014 by Kathryn 255 Comments

If you or somebody in your family is gluten intolerant, cooking a quick and delicious meal becomes more of a challenge. But luckily, more and more companies are striving to provide gluten-free alternatives to traditional wheat-based products. Pasta is one of those foods that I can’t ever imagine giving up, even though I personally don’t eat a whole lot of wheat-based products overall. So I was pretty excited to hear about the new Barilla Gluten Free Pasta and couldn’t wait to give it a try.

I received an assortment of Barilla Gluten Free Pasta products and some fun Barilla accessories to review. I appreciated that Barilla is offering so many different varieties of pasta in a gluten-free version. And as if that isn’t awesome enough, the company has a fabulous collection of Gluten Free recipes too. Personally, I can’t wait to try this delicious-looking Barilla Gluten Free Rotini with Sauteed Summer Vegetables!

Spoil Your Valentine with an Italian Sausage Borsetti with Bacon and Arugula Recipe

January 25, 2014 by Kathryn 22 Comments

I adore a peaceful and romantic meal on Valentine’s Day as much as anyone else, but creating a delectable dinner takes time and like every parent with young children, I don’t have much time to spare when it comes to dinner preparations. That’s why I love Olivieri pasta and sauces. The products are fresh with a great gourmet flavour and cook up in just minutes so that creating a romantic meal can be done in a flash.

It’s said the way to a man’s heart is through his stomach, but I’m pretty sure the way to most men’s hearts is through bacon. So I decided to create a decadent yet hearty Valentine’s Day dinner using sausage-stuffed pasta, bacon, arugula and pesto. This meal is meaty and filling but still fancy enough for a date-night dinner. Best of all, it contains just four ingredients and only takes about twenty minutes to prepare!

Celebrate National Family Dinner Night With This Easy New York Striploin with Garlic Shrimp and Pepper Linguine Recipe-Giveaway

September 10, 2013 by Kathryn 118 Comments

For the ninth year in a row, M&M Meat Shops is encouraging busy families to sit down together for dinner on September 19, 2013 for National Family Dinner Night! Sitting down for dinner is something that families tend to do less and less as our lives get busier, but it really is worth making time for! Family dinner isn’t just a chance to eat; it allows parents and children to reconnect, talk about their day and share triumphs and troubles to ensure a close bond that lasts long after the meal is done.

Of course, it can be hard to get that delicious family dinner ready sometimes, and that’s why M&M Meat Shops offers so many quick and convenient meal options perfect for an on-the-go family. This year, I was asked to create a National Family Dinner Night recipe using M&M products and I couldn’t wait to tackle the challenge!

New York Steak with Garlic Shrimp and Pepper Linguine Recipe

The hardest thing about creating a recipe with M&M products is the fact that so many of the products available are delicious just as they are! Whether you’re looking for a tasty side dish like Grilled Vegetables or Parmesan and Garlic Potato Wedges, or a filling main course such as Lemon & Herb Chicken Tenderloins or Cod Andalusia, so many of the options need nothing more than to be heated up and served. Eventually I decided to create a pasta dish, since noodles are always a kid-friendly favourite. By adding M&M Meat Shops “New York” Striploin Steak, Garlic Shrimp and Sautéed Onions and Peppers, I was able to create a meal fancy enough for company that was still ready in a flash!
