About a month ago, my family moved into the newly built house that my husband and I have been labouring over for the last five months. It sits on six acres of beautiful prairie land in a subdivision just outside Saskatoon, and is everything we dreamed it would be.

For the most part, everything about the move has been wonderful. But even though we’re in a subdivision, we are still technically on a rural property. And that comes with some challenges. That’s why I was so excited to discover Trudeau Fuel lunch gear this year. These innovative products offer handy lunch solutions for kids and adults alike. I received a variety of Trudeau Fuel portable meal containers to check out and I couldn’t wait to put them to the test.

My personal favourite product was the Trudeau Fuel Salad To Go Container. Not only did this clever salad bowl have a built-in dressing tub, it also featured a unique cooler lid to ensure that vegetables stayed crisp all day long. My fiancé often takes salads for his supper when he’s away on a train, so having a way to keep that salad tasting fresh for hours was ideal. Summer is coming, along with summer vacations and travel. Traveling with kids is challenging whether you’re going for a day trip or a week-long vacation, and one of the major issues is what to feed the little ones while on the road. Here are six great tips for keeping your kids fed when you’re away from home.

Use Your Travel Cooler

This is an important tool to have in your arsenal. Choose a small personal-sized cooler if you have one or two children, but if you have three or more go for a full-sized cooler. Skip the loose ice cubes and keep your cooler cold and mess-free with commercial ice packs or frozen water bottles. You can keep dairy snacks and filled baby bottles cool all day, and chill fruits, veggies and dip for maximum enjoyment in the summer heat. For added cooling power, freeze juice boxes the night before your trip. They will melt slowly and help keep your cooler cold to boot.

Bring Your Gear

If you have infants or toddlers, you probably have special feeding gear that you always use at home. Instead of packing up everything from home, consider buying duplicates of favorite bowls, cups, and utensils for traveling. Other travel-friendly gear you may not have include spill-free snack cups you can use to serve dry cereal, chips, small berries, and other snacks to kids while in their car seats, and spill-proof cups. If you have older babies and toddlers, look for cups with straws as these are easier to drink from when your kids are held in a reclining position in a car seat. [Read more…]

Tuna and Feta Bean Salad Recipe is Perfect Picnic Fare

In less than a week, the closing date for my house sale will be here and I’ll be saying goodbye to my childhood home forever. Having lived in the same house almost my entire life, it’s an emotional time for me.

But it’s also a busy one since the house has accumulated so much over the years. And between packing, throwing out garbage and giving away items I’m not putting into storage, I don’t really have the time or utensils to cook proper meals at the moment.

Luckily for me, Kraft Canada came to the rescue with some incredible portable picnic recipe ideas! The recipes are quick and easy to whip up, can be eaten quickly or taken on the road and, best of all, require hardly any cooking! I decided to put a twist on a popular recipe on the website: Layered Bean Salad with Feta.

While it’s a hearty enough salad to be a meal already, I need all the energy I can get at the moment. Adding tuna was the perfect way to make this tasty salad even healthier and more filling!

While I’m sure this bean salad recipe is most flavourful when made with fresh beans as in the original recipe, a lack of pots and pans in the house led me to use canned green and yellow beans instead. The resulting salad was still delicious and saved me both the time and the pot I would have needed to use cooked fresh beans instead.

I also switched up the dressing in the salad to add even more Greek flair to the final creation. The Kraft Greek Feta and Oregano dressing was tangy, flavourful and paired wonderfully with the other ingredients. I added the dressing to the salad right away rather than waiting until I was ready to eat and I found that the results when eating the salad the next day were reminiscent of a flavourful deli bean salad.

Tuna and Feta Layered Bean Salad

Yield: 8
Prep Time: 5 minutes
Total Time: 5 minutes

Easy layered bean salad hearty enough for a meal and perfect for a picnic.

Ingredients

  • 1 can (19 fl oz/540 mL) cut green beans
  • 1 can (19 fl oz/540 mL) cut wax beans
  • 1 can (19 fl oz/540 mL )no-salt-added red kidney beans, rinsed
  • 2 cups grape tomatoes, halved
  • 1 cup finely chopped onions
  • 1 can (19 fl oz/540 mL) no-salt-added chickpeas (garbanzo beans), rinsed
  • 1 can (5 fl oz/125 mL) chunk light tuna
  • 1 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
  • 1/2 cup Kraft Greek Feta and Oregano Dressing
  • 1/4 cup chopped fresh parsley

Instructions

  1. Layer kidney beans, yellow beans, tomatoes, onions, green beans, chickpeas, tuna and cheese in 8 clean 500mL canning jars.
  2. Mix dressing and parsley in small bowl and pour small portion over each salad. Serve immediately or store in refrigerator for up to four days.

Notes

If desired, layer ingredients in large salad bowl instead of jars.
