When it comes to holiday baking, there are a few tried and true favourites that my family absolutely can’t live without. Benjamin always requests his favourite No Bake Chocolate Peanut Butter Bars. And Zackary and my husband are both fans of my foolproof Butterscotch Oatmeal No-Bake Cookies.

But personally, my favourite holiday treats must have my favourite holiday ingredient…Philadelphia Cream Cheese! The smooth, tangy taste of Philly is good for so much more than just cheesecake. And that’s why my holiday baking always includes this scrumptious Pumpkin Cream Cheese Roll. It’s easy, looks fancy and tastes absolutely divine! [Read more…]

Add More Vegetables to Your Diet with Hidden Garden Cookies

January 21, 2016 by Kathryn 193 Comments

One of the hardest things about healthy eating for me is giving up all those treats that taste so good, yet aren’t all that good for my body. I can’t resist the occasional sweet treat, and cookies are one of my favourites.

My boys love sweets just as much as I do, but of course I don’t want them having too much junk food either. Luckily, Hidden Garden has come to the rescue with tasty gluten-free and nut-free cookies that have a half-serving of hidden vegetables in every portion!

These cookies are crispy with a melt-in-your-mouth texture that’s absolutely addictive. Available in Chocolate Chip, Ginger Snap, Red Velvet and Cocoa Cherry varieties, there’s a flavour to suit everyone. And since every serving includes vegetables such as butternut squash, beets and spinach, they’re a treat that I can eat without feeling too guilty!

Carving Pumpkins is Eco-Friendly with the Glad Gruesome Challenge

October 30, 2013 by Kathryn 7 Comments

While I don’t mention it often, I absolutely love carving pumpkins. There’s something so fun about making a piece of art that will only last for a few days and over the years, I’ve tried all kinds of pumpkin patterns, from sunset silhouettes of the African Serengeti to fantasy castles and dragons. So when I was asked to carve a pumpkin as part of the Glad Gruesome Challenge this year, I leaped at the chance.

The mission was simple. Choose a pumpkin, carve it for Halloween and throw the guts into a countertop compost bin lined with a Glad Compostable Bag featuring Febreze Freshness. Then check to see how well the bag contained the smell and mess of the decomposing pumpkin. The boys and I chose our pumpkins and started carving!

I decided to try out the Iced Pumpkin Spice Cake. The fabulous thing about baking with pumpkin is that it creates a very moist and dense dessert that’s sure to satisfy the most discriminating sweet tooth. But it can make meals that stick to the pan, so I was eager to whip up this cake with a little help from PAM! [Read more…]
