Cookies and Cream Cheesecake

A simple and decadent cheesecake that's perfect for holiday entertaining!

  • 2 1/2 cups chocolate cookie crumbs
  • 1/2 cup butter melted
  • 3 packages 250g cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs
  • 10 chocolate sandwich cookies broken into pieces
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup whipping cream


  1. Preheat oven to 350 degrees.
  2. Combine cookie crumbs and melted butter. Press into 9x13 inch cake pan.
  3. Beat cream cheese with electric mixer until light and fluffy. Gradually add sugar until fully incorporated.
  4. Beat in eggs one at a time just until combined.
  5. Pour half of cream cheese mixture over crumb crust. Sprinkle with broken cookies and cover with remainder of cream cheese mixture.
  6. Bake for 40-50 minutes, until almost set. Chill at least four hours.
  7. Melt chocolate chips and whipping cream in small saucepan, stirring until smooth.
  8. Spread chocolate over top of cheesecake until covered. Let chocolate harden, slice and serve.

Cake may be wrapped and stored in fridge for up to one week or in freezer for up to two months.
