Apple Cinnamon Swirl Muffins

Moist and tender muffins with a cinnamon topping!

  • 1 pkg. Robin Hood Quick Bread Mix Cinnamon Swirl
  • 1 cup unflavoured yogurt
  • 3 tbsp. vegetable oil
  • 2 eggs
  • 1 cup grated apple


  1. Preheat oven to 350 degrees. Grease muffin cups or line with paper liners.
  2. Reserve 1/4 cup swirl mix (small packet).
  3. Combine quick bread mix, remaining swirl mix, yogurt, oil and eggs in large bowl. Stir until mixture is combined. Stir in grated apple.
  4. Spoon batter into prepared muffin cups. Sprinkle remaining swirl mix over unbaked muffins.
  5. Bake for 20-22 minutes, until a toothpick inserted in the centre of a muffin comes out clean. Cool in pan for ten minutes. Remove from pan and cool completely on wire rack.

Recipe Notes

For a deliciously different alternative, substitute grated pear for the apple.
