Barbequed Peanut-Sauced Ribs

The unique barbeque sauce on these meaty ribs will make them a summertime favourite!

Ingredients

  • 2-3 lbs. pork back ribs cut into sections
  • 1/3 cup coconut oil
  • 1/3 cup peanut butter
  • 2 tbsp. soy sauce
  • 1 tbsp. curry powder
  • 2 cloves garlic minced
  • 1/3 cup frozen limeade concentrate thawed

Instructions

  1. Precook ribs in boiling water for 50-60 mins. Drain.
  2. Meanwhile, combine all remaining ingredients until smooth. Sauce may need to be warmed slightly to liquify coconut oil.
  3. Turn barbeque to medium-high heat.
  4. Place ribs on grill and brush both sides with sauce.
  5. Grill approximately 10 minutes, until sauce is bubbling and ribs are hot, turning halfway through cooking time.
  6. Serve with additional sauce if desired.
