“Lime in the Coconut” Cocktail

Take the work out of hosting by laying out all the plates, cutlery and condiments in advance. By encouraging a self-serve atmosphere, you can spend time with your guests instead of serving all night. Complete the meal offer a cool and colourful blender drink perfect for a summer’s eve.

Ingredients:

  • 1 1/2 cups Coconut milk
  • 1 can 250mL BACARDI® Mixers Margarita frozen concentrate (unthawed)
  • 1 cup BACARDI® Superior white rum (optional)
  • 4 cups Ice cubes

Directions:

In blender combine coconut milk, margarita frozen concentrate and rum (optional); add ice cubes. Pulse until blended and frothy, about 1 minute.

Makes 4-6 servings.

The best thing about this cocktail is that the alcohol can be left out of the recipe and added afterwords to individual glasses so that children and non-drinkers can still enjoy the beverage while those that choose can cool down with a drink that has a little more kick! And since it’s all whipped up in the blender, you can make enough for a crowd in just minutes! My boys and I both loved the combination of creamy coconut and tangy lime in this unique beverage and it was a great way of beating the heat!

    My favorite summer entertaining tip is to have everyone bring something and I provide the drinks. It is fun to set up a make your own drink station…I even make a special area for the kids to make their own creations too!

    my tip is, alwasy have cold beer/wine and punch ready to go, ice cream for the kids and you can never have too many bbq sauces. variety on the bbq is fantastic

    My tip is to keep things fun and simple! Have Burgers, hot dogs, marshmallows, drinks and snacks on havd so people can cook whenever they want & we spend it playing volleyball, in the pool or hot tub

    My summer time tip for entertaining is to have great fun sunshine blue sky music and frozen separated purple grapes to plop into the crazy cocktails and the kids like to feel special when you plop it into their children drinks

    Tip: Use the BBQ as much as you can. That way you’re not using the oven and keeping the house cool. Plan potluck BBQ’s with friends and family, that way you can try new foods and relax with good friends!
