As soon as the snow melts, my boys and I start spending a lot more time outside in the back yard. And that means that I spend a lot more time cooking outside too. There’s nothing my family likes better than a meal cooked on the barbecue and so this weekend, we decided to welcome spring with our all-time favourite barbecued meal, Barbecued Ribs with Thai Peanut Butter BBQ Sauce.
These ribs are amazingly addictive, with homemade Thai-style BBQ sauce that’s finger-licking good. But of course, the sauce is only as good as the ribs themselves, so I used some special preparation to ensure the juiciest, most tender ribs ever.
The secret to really good pork ribs is two-fold. First, splurging on back ribs, the meatiest variety of ribs available, is essential. Secondly, precooking the ribs ensures that they are deliciously tender and juicy. Just cut the ribs into two or three rib sections and boil them in a pot of water with about one tablespoon of salt added for 50-60 minutes before barbequing for the best ribs ever.
This Thai peanut butter BBQ sauce is one of our family’s favourites. The peanut flavour is such a unique twist in a sauce and the blend of curry powder, garlic, lime and coconut is the perfect accompaniment for a final flavour that enhances the meat so well. But they’re as messy as they are delicious, especially since more sauce makes them even better as far as my boys are concerned. Thank goodness we had plenty of wet wipes to help us clean up afterwords!

Barbecued Ribs with Thai Peanut Butter BBQ Sauce
The unique barbecue sauce on these meaty ribs will make them a summertime favourite!
Ingredients
- 2-3 lbs. pork back ribs, cut into sections
- 1 tbsp. salt
- 1/3 cup coconut oil
- 1/3 cup peanut butter
- 2 tbsp. soy sauce
- 1 tbsp. curry powder
- 2 cloves garlic, minced
- 1/3 cup frozen limeade concentrate, thawed
Instructions
- Precook ribs in boiling water with 1 tbsp. salt added for 50-60 mins. Drain.
- Meanwhile, combine all remaining ingredients until smooth. Sauce may need to be warmed slightly to liquify coconut oil.
- Turn barbecue to medium-high heat.
- Place ribs on grill and brush both sides with sauce.
- Grill approximately 10 minutes, until sauce is bubbling and ribs are hot, turning halfway through cooking time.
- Serve with additional sauce if desired.
