September is always a busy month for our family, but that’s never been more true than it is this year!
Putting the boys in a new school in a new city, preparing for a work transfer and a house purchase and, to top it all off, we’re all flying to Ontario in less than a week as Jeremy and I get married and take our honeymoon!

New Classico di Bologna Bolognese Pasta Sauce boasts tender pork and beef in a flavourful tomato sauce.
And Classico Di Molise Spicy Tomato & Parmesan Cream Pasta Sauce combines spicy red pepper, tomato and real parmesan cheese for a rich and creamy sauce choice.
I decided to use one of the sauces to whip up a delicious dinner and since we all love chicken, I put my own kid-friendly twist on Spicy Tomato-Chicken Parmesan.
With just four ingredients and thirty minutes, I created an oven-baked dinner the whole family loved: Spicy Baked Chicken Parmesan Casserole!
I used our favourite healthy brand of white meat chicken strips with whole grain breading and a fibre-enriched pasta for this recipe to add some extra nutrition to the meal.
With a salad served on the side, this Spicy Chicken Parmesan Casserolee was the perfect dinner for a chilly fall night, with an extra bit of spice that helped give it a great homemade flavour.
Zackary and Benjamin both devoured their food and even though Benjamin tends to like his meals on the milder side, he didn’t mind the spice in this dish at all.
The combination of cheese, chicken and pasta was so kid-friendly that he didn’t even mention the extra heat the dish had…though he did drink a big glass of milk with his meal!
If your family prefers less spice, you can easily substitute your favourite brand of store-bought or homemade pasta sauce instead.

Spicy Baked Chicken Parmesan Casserole
Easy four-ingredient Chicken Parmesan with a fun spicy sauce!
Ingredients
- 250 grams spaghetti, uncooked
- 8 frozen breaded chicken strips
- 1 jar Classico Di Molise Spicy Tomato & Parmesan Cream Pasta Sauce
- 6 Cracker Barrel Marble Cheese Slices
Instructions
- Preheat oven to 425 degrees.
- Cook spaghetti to al dente in salted, boiling water. Drain and toss spaghetti with half of the Classico sauce.
- Pour spaghetti into baking dish. Top with frozen chicken strips.
- Spread remainder of sauce over chicken strips. Top with marble cheese.
- Bake for 20-25 minutes, until chicken is cooked and cheese is bubbling. Serve immediately.

Mmmmmm, this looks so good, I love chicken parm. but I would have to use a different sauce, I can’t take the spice and hubby can’t anymore either ever since his chemo, but other than that it’s still very good!!
