While a new year starts out with great intentions for many people, it’s usually around the end of January that resolve starts to fade and we start to slip in our attempts to stick to our new goals.

Whether a bout of cold weather convinces you to skip that run, or an especially busy week has you reaching for the phone to order takeout instead of cooking at home, little stumbles don’t have to mean the end of good intentions! When it comes to choosing food for my family, I want products that are delicious, wholesome and packed with nutrition. And for me, that usually means choosing products that are organic. With no pesticides and natural ingredients, choosing organic is the perfect way to support the environment while enjoying great taste too! That’s why I’m so excited about Canada’s National Organic Week, running from September 19-27.

Nature’s Path, one of my very favourite organic companies, is supporting the organic movement with a great video about why your food choices matter, and the difference that one person can make. I love the idea that the earth should always be left in a better state than it’s found, and that’s a concept that Nature’s Path embraces wholeheartedly. Teach Kids About the Earth with Help from EnviroKidz-Giveaway

One of the things I love about my house is the fact that the yard is big enough for a garden. I enjoy growing my own vegetables each year for so many different reasons. The taste is so much better, I don’t have to worry about pesticides and chemicals on produce and I can save money on my weekly grocery bill. What more could any health-conscious mom on a budget ask for?

Celebrate Earth Day with Fun EnviroKidz Dessert Recipes and a Party-Giveaway

There’s no better way to celebrate Earth Day than with a party, and this year EnviroKidz has some great ideas to help you throw the best Earth Awareness Party ever! My personal favourite idea is these adorable cupcakes made with EnviroKidz Koala Crisp cereal!

EnviroKidz Koala Crisp Mini Cupcakes

Sweet and tasty mini cupcakes made with crunchy organic Koala Crisp cereal!
Course Dessert
Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes

Ingredients

  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp brown rice syrup
  • 1 tsp vanilla
  • 2 cups EnviroKidz Koala Crisp™ cereal
  • 3 oz cream cheese softened
  • 1 tbsp butter softened
  • 3/4 cup icing sugar
  • 4 tsp cocoa powder
  • 4 strawberries sliced

Instructions

  1. Grease a mini-muffin pan; set aside. In saucepan set over medium
  2. heat, bring butter, honey and brown rice syrup to boil. Boil for about 1 minute or until mixture is well combined and slightly thickened.
  3. Remove from heat. Stir in vanilla and cereal.
  4. Divide evenly and press into 18 mini-muffin cups. Cool completely.
  5. Remove from pan.
  6. Icing: Meanwhile, in a bowl, beat cream cheese and
  7. butter together until well combined. Gradually beat in icing sugar and cocoa until smooth.
  8. Transfer icing to a piping bag fitted with a star tip. Pipe a swirl of icing onto each cupcake. Garnish with a strawberry slice.

Chocolate Gingerbread Crunch Cookies-Mason Jar Cookie Mix

Give someone the gift of a beautiful, ready to mix cookie recipe, all in a mason jar. Try with a variety of Love Crunch flavours to mix up the cookie mix and create handy gifts for your friends and family.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Nature’s Path Love Crunch® - Gingerbread
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 cup semisweet chocolate chips
  • 3/4 cup unsalted butter room temperature
  • 2 tbsp maple syrup
  • 2 tsp water
  • 1 tsp vanilla

Instructions

Mason Jar Cookie Mix

  1. In a wide-mouth 4-cup mason jar, layer the flour, baking soda, salt, granola, brown sugar, granulated sugar and chocolate chips. Cover with tight-fitting lid. Decorate jar as desired and attach cookie recipe.

Chocolate Gingerbread Crunch Cookies

  1. Preheat oven to 350°F. In a large bowl, with electric beaters, beat butter, maple syrup, water and vanilla together until light and fluffy.

  2. Add contents of jar and stir until well blended.
  3. Using a tablespoon, shape into balls and place on parchment-paper lined baking sheets. Flatten slightly.
  4. Bake for 10 to 12 minutes or until lightly golden.
  5. Cool on baking sheet for 5 minutes. Transfer to racks and cool completely.
