Delicious Old El Paso Restaurant-Style Grilled Chicken Taco Salad Recipe #YouMexiCAN

Living in a small town all my life, I’ve always known that small town tend to be havens that harbour the most delicious food imaginable. And my own hometown is certainly no exception. From the local butcher shop’s famous beef jerky to the local bakery’s decadent brown butter brownies to the family restaurant’s infamous pizza, there are all kinds of culinary delights in Lumsden! And when I’m in the mood for Mexican, there’s no better place to get it than the local tavern. An ice-cold Corona and a Grilled Chicken Taco Salad are always a great way to satisfy my craving!

So when Old El Paso Canada gave me the challenge of indulging in a Mexican meal at a restaurant and then recreating the dish at home, I was only too happy to head out for the evening and spoil myself with a little Mexican food and a tasty beverage. I snapped my picture of the meal and got ready to recreate my favourite Mexican indulgence…with a little help from Old El Paso!

Throw a Mexican Fiesta with Old El Paso and an Easy Tres Leches Cake Recipe-Giveaway

There’s nothing worse than getting into a dinner rut, but once the school routine kicks in, it tends to happen. The same four or five meals end up in a rotation that can soon have the whole family feeling less than thrilled about sitting down to supper. So when Old El Paso Canada sent me a fabulous assortment of Dinner Kits and kitchen gadgets to help me break out of the dinner rut, I couldn’t wait to embrace the challenge.

As it happened, September 16 was El Grito de Dolores, or Mexican Independence Day, the biggest holiday on the Mexican calendar. What better way to break out of the dinner rut than to celebrate the holiday with a Mexican feast? I decided to serve up scrumptious Old El Paso hard and soft tacos complete with homemade guacamole and all the fixings. My foolproof guacamole recipe, which simply combines one mashed avocado, a few tablespoons of salsa, a spritz of lime juice and a bit of chopped fresh parsley, lets me enjoy my favourite Mexican topping in a flash!

The boys and I had a great time feasting on tacos together, but of course it’s not really a party without a special dessert! I wanted something fun and fitting with our Mexican theme, but it was still a weekday so I also wanted something quick and easy. Shake Off that Dinnertime Rut with Old El Paso #YouMexiCAN

I love to cook and I tend to be quite creative when I do. From vegetarian lasagne to shrimp curry to ginger beef, I love finding a few favourite dishes from all different styles of cuisine and then tweaking them until they’re just the way I want. Unfortunately, my boys are picky eaters and invariably refuse to eat anything that I’ve cooked when supper arrives. “I don’t like that,” is a common refrain in our household and it drives me absolutely crazy!

As a result, I’ve found myself stuck in a dinnertime rut and it’s not one that I’m happy about. Instead of the fun and exotic dishes I want to create, I tend to stick to kid-friendly basics like spaghetti and hot dogs. After all, what’s the point of working so hard to make a fancy and delicious meal when I’m the only one that’s going to be eating it?
