If there’s a more delicious pasta dish than my mom’s famous Spinach Lasagna, I haven’t discovered it. But as most cooks know, lasagna is a pain to make! Cooking the noodles, making the sauce, layering, baking…it really does take hours by the time it’s finally finished!

For me, there’s only one way to use lasagna noodles, so I picked up a package of the Olivieri Lasagna Sheets and the other ingredients I would need for Spinach Lasagna and then got cooking!
The lasagna sheets were so easy to work with; they were larger than traditional noodles and since they were fresh, cutting the sheets to fit perfectly into the pan was easy. Also, because they didn’t have the ridges that are on the edge of dry lasagna noodles, I was able to fit an extra layer of lasagna goodness into my pan!

I love putting lots of veggies in my meat sauce when I make lasagna; onions, peppers, mushrooms, zucchini, spinach…. yum! I’ve never bit the bullet & bought the more expensive fresh noodles before, but your description above makes me want to… maybe I’ll make some this weekend…..
You definitely should, Leila! I was the same way; I didn’t want to pay more for the fresh ones! LOL But at four bucks a package, the sheets are actually pretty reasonable (and totally worth it)! :)
I love Olivieri products and so do my kids.
I use Ricotta, spinach, mozzarella, mushrooms but instead of beef I use ground turkey. It tastes better than ground beef and healthier.
I put lots and lots of mushrooms and some grated carrots in sauce.
I love lasagna! I like to put lots of veggies in my lasagna – red peppers, green peppers, spinach, mushrooms, etc. and I like to include ricotta cheese. Yummy!
