If there’s one thing that the average parent could use more of, it’s time. Being busy is one of the hallmark traits of being a parent and I’m certainly no exception! As a result, I’ve learned numerous shortcuts so that I can accomplish my tasks even when I feel like I don’t have enough time to do so!
Of course, a shortcut is no good if it doesn’t still produce the results I want and that’s why I was so excited to try the new Robin Hood Quick Bread Mixes. The mixes promised homemade taste in a convenient mix that could go from box to oven in just five minutes and as an avid baker that rarely has enough time to bake, the concept was a dream come true to me.
I had the chance to put the claims to the test when my sister stopped by for a visit last week. She had been expected in the afternoon but instead arrived at the house mid-morning. Obviously I hadn’t had a chance to prepare anything since she was so early, but I knew the Quick Bread Mixes would still let me serve a tasty snack with our coffee as we sat chatting!
I decided to make the Robin Hood Banana Quick Bread Mix and it really was a snap whipping up the batter. I simply combined the mix with water, oil and eggs, stirred it up with a spoon until it was combined, poured it in the loaf pan and popped it in the oven. Then my sister and I were able to chat and sip our coffee while the banana bread baked. Less than an hour later, we were enjoying a delicious slice of quick bread, fresh from the oven!
I was especially impressed with how authentic the banana flavour of the bread was. Mashing up real bananas for banana bread is actually one of the cooking tasks I rather dislike; it’s just such a messy process and measuring the mashed banana is a pain. Now I don’t need to do so anymore since I can get that real banana flavour from this simple mix!

Bought the chocolate chip version as it was all my store had the day I shopped. Made it last night and it is a crumbly mess. Will have to try the banana version to as it sounds like it worked well for you. Hoping it works when I try again because I love the concept and disappointed with what I have right now.
