Easy waffles that bake up light and fluffy. This batter keeps for up to a week in the fridge in a covered container!

Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cup milk
  • 1/2 cup oil
  • 1 tbsp. sugar
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. cinnamon, optional

Instructions

  1. Beat eggs with hand mixer or in food processor until light yellow.
  2. Add remaining ingredients and beat until combined.
  3. Pour batter into waffle iron and cook until golden brown. Serve immediately.
  4. Store extra batter in covered container in fridge for up to one week.

Notes

For healthier waffles, substitute whole wheat flour for white flour and plain yogurt or unsweetened applesauce for oil.

    I like to make a berry syrup by mixing raspberries, blackberries and blueberries with sugar. So good!

  2. My favourite way to top my waffles is with fresh strawberries and fresh blueberries (never frozen/previously frozen!!) and lots and lots of freshly made whipped cream.
