With light summer flavours a favourite right now, seafood is always a top pick for dinner. And as it happens, one of my favourite seafood dishes is one that uses salt poaching to enhance the flavour and texture of the fish.
Salt Poached Cod with Butter Egg Sauce is a Finnish recipe that might sound like an unusual combination at first. But the flavours blend together in a way that is completely magical.
This slightly updated variation of an old Finnish recipe that my mother, who was born in Finland, cooked for the family when I was young, shows just how tasty food can be when salt is the star!
The highlight of this dish for me has always been the rich egg sauce that’s served over the fish. I usually serve it over mashed potatoes for a side dish as a unique alternative to gravy.
Whisking the hot brine into the melted butter gives the sauce just the right texture and a great salty flavour that’s almost addicting. And even though it has a gourmet taste, it only takes about thirty minutes to make!
I chose Windsor Table Salt for this Finnish recipe because I find it easier to get the exact level of saltiness I want in my dish with its finer, smaller grains.

Salt Poached Cod with Butter Egg Sauce
A light yet decadent main course that uses salt poaching to create a meaty, flavourful seafood dish.
Ingredients
- 4 boneless cod fillets, or other firm whitefish
- 2 tbsp. Windsor Table Salt
- 1/2 cup butter, melted
- 2 hard-boiled eggs, chopped
- 1 tbsp. chopped fresh parsley, or 1 tsp. dried parsley
Instructions
- Fill large skillet with approximately one inch of water. Add salt and bring just to a boil.
- Add fish and reduce heat to a simmer. Poach for 5-10 minutes, flipping halfway through cooking time, until fish flakes easily with a fork.
- Remove fish to paper towel-lined plate to drain.
- Meanwhile, combine melted butter, chopped eggs and parsley. Whisk in 1/4 cup of the salt water used to poach fish.
- Serve fish hot topped with sauce. Extra sauce can be served over rice or mashed potatoes as a side dish.
