Easy Greek Egg White Omelet Roll Recipe

Making it is as simple as whisking together Burnbrae Farms Naturegg Simply Egg White with milk, pouring the egg whites into a pan and sprinkling on our favourite Greek toppings. After baking for half an hour, I have a healthy omelet that feeds the whole family.

Greek Egg White Omelet Roll

A simple and healthy baked omelet perfect for breakfast, lunch or a light dinner.

Ingredients

  • 1 1/2 cups Burnbrae Farms Naturegg Simply Egg Whites
  • 1 cup skim milk
  • 1/3 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp parsley
  • 1 1/2 cups torn fresh spinach leaves
  • 1 tomato, diced
  • 1/2 cup red pepper, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup sliced black olives
  • 1 cup feta cheese, diced

Instructions

  1. In medium bowl, whisk together first six ingredients until blended.
  2. Line 9 inch by 13 inch pan with parchment paper. Pour egg mixture into pan.
  3. Sprinkle with remaining ingredients.
  4. Bake at 350 degrees for approximately 30 minutes, until eggs are cooked through.
  5. Lift omelet out of pan using edges of parchment paper and let cool for five minutes. Gently roll up omelet and cut into slices.
  6. Serve immediately, garnished with additional tomato, parsley and feta if desired.

  1. Our favourite breakfast or quick meal is called Egg in a Frame. Lightly butter a piece of bread and then cut out a circle in the centre, leaving a frame around it. Place the ‘frame’ in a fry pan over medium heat as well as the cut-out centre. Put a pat of butter in the opening and when melted, crack an egg into the opening and top with salt and pepper to taste. When bottom is browned and egg is partially cooked, flip over and cook to desired level of firmness. Remember to flip the cut-out centre.
    Serve with centre on side – it is always the first piece to get eaten.

  2. Simple scrambled eggs with cheddar cheese is a favourite in the mornings at my house, with some rye toast on the side!

  3. I am a big fan of frittatas. I can add in all kinds of different ingredients and use up different leftovers of veggies or meat.

  4. My grandson, the little chef, loves eggs and likes to prepare them in various ways especially whisking and thinking of new ideas like adding cheese, veggies.

  5. My go to is egg-in-a-hole toast. I like bake them in a sheet pan – that way I can fit enough for everyone in one go.
