Going Back to School is Better with a Mexican Breakfast Pizza Recipe

The school year is fast approaching and I’m already starting to plan out some easy and delicious meals for the busy school season. While I tend to stick to fairly basic sandwiches and snacks for the most part, I like having some fun and creative meal ideas at the ready as well.

And that’s especially true for breakfast! Even though my boys love their cereal, they also love heartier options in the morning and since breakfast is the most important meal of the day, I want to make sure that they head out the door feeling satisfied.

I recently received a variety of products to create a tasty back-to-school recipe, so I decided to combine a few kid-friendly favourites into one quick and easy breakfast idea: a Mexican Breakfast Pizza recipe!

Initially I had planned to make more traditional pizzas using regular pizza sauce, but since my oldest son loves Mexican food, I made the switch to salsa to spice up the mini pizzas a bit. I’m glad I did because the extra bit of tangy heat from the salsa was the perfect compliment to the other ingredients!

I found two of these pizzas were the perfect amount for me, while my boys ate between one and two pizzas each depending on how hungry they were. The OneBun rounds were delicious but I’m sure that in a pinch, halved English muffins would work just as well.

This Mexican Breakfast Pizza recipe took just minutes to make, but for those especially busy mornings, they can even be made in advance and frozen in an airtight container before broiling! Just make sure to add a few minutes to the broiling time to ensure the rounds are heated through before serving.

Mexican Breakfast Pizzas

Yield: 2 (2 pizzas each)
Prep Time: 10 minutes
Cook Time: 3 minutes
Total Time: 13 minutes

Quick and simple breakfast pizzas perfect for busy school mornings!

Ingredients

  • 2 Ozery OneBun Multigrain Buns, or substitute halved English muffins
  • 3 tbsp. salsa
  • 1 tsp. oil
  • 4 eggs
  • 2 strips bacon, cooked and crumbled
  • 1/2 cup grated cheese

Instructions

  1. Halve the buns and place four halves on baking sheet. Toast under broiler for approximately 1 minute, until browned.
  2. Spread each bun with about 1 tsp. salsa.
  3. Heat oil in skillet over medium-high heat. Add eggs to skillet and stir until scrambled, about four minutes.
  4. Spoon 1-2 tbsp. of scrambled eggs on each bun half. Sprinkle crumbled bacon on eggs.
  5. Sprinkle grated cheese over buns and broil until cheese is melted and bubbly. Serve hot.

Notes

If desired, pizzas can be prepared until just before the final broiling and frozen in a covered container up to one month. To serve, broil from frozen until pizzas are heated through and cheese is melted and bubbling.

    Well, I am having my coffee right now ant the Mexican Mini Breakfast Pizzas look so delicious. That is the first thing I would make with those. In fact, I am going to make that for lunch on my pumpernickel bread. ……….. that is all I have in the house right now.

  2. A bacon and egg sandwich with cheese would be my choice on the Just Minis and I like the addition of the salsa, so would add that as well.
