And while I like this high protein, vegetarian version of baked omelet, there are infinite variations to try as well!

Sprinkle on ham, green pepper and cheddar cheese for a heartier, meatier version. Or try crumbled bacon with diced tomato and mozzarella.

  1. We like hard boiled eggs for in salads or just on their own. My kids love egg muffins anytime of the day. Quiche with the pre made crusts are perfect for a light summer dinner. i let the kids pick what they want in the quiche and i know they’ll eat it.

I love omelettes, poached eggs, eggs on English muffins, & scrambled eggs. We also like to have hard boiled eggs for a quick snack, add to salads, or sandwiches.

I love Eggs Benedict but they can be a lot of work but I have found it super easy to make using Knorr Hollandaise mix in my microwave…..maybe not for purists but sure is great to have it fast and easy.

    1. Thanks for the tip, Sherry! I love Eggs Benedict too, but for a quick meal I agree, making the sauce just isn’t worth it. I’ll have to try the sauce mix next time I’m short on time and get a craving!

  4. I like scrambled omelets – they start out to be a loaded omelet but turn out to be quite scrambled as I can’t seem to make omelets and keep them in one piece!!

      1. Thanks! The kids think it;s funny when I scramble them but I’d like to do it right occasionally!!
